Shrimp Crispy Rice
Weekday fried rice gets an upgrade that is so easy, that you won’t go back to your old ways. Nowadays crispy rice is the craze, but what about crispy fried rice? Just a few more steps added to your fried rice recipe, and your dish has transformed into crispy goodness. Make sure to use a cast iron skillet or an oven proof pan!

(serves 3-4)
INGREDIENTS:
6-7 green onions
1 large carrot, small dice
8 oz of green beans, 1” segments
½ C green peas, defrosted
3 garlic cloves, minced
1 inch ginger, grated
2 large eggs, scrambled
2 C DAY OLD COLD rice
2 Tbsp soy sauce
1 Tbsp sesame seed oil
3-4 TBSP avocado or other neutral oil
1 lb jumbo shrimp (or really any protein you’d like: sliced chicken breast, extra firm tofu, or pork)
½ tsp white pepper
Kosher salt
Chili crisp (optional- but try out my favorite!)
COOKING DIRECTIONS:
Because the cooking of this dish is fast, you’ll want to have all your ingredients chopped and measured before you start cooking. MISE IN PLACE.
You’ll also be using a large skillet or wok. Woks hold a great amount of heat and provide an incomparable flavor, but if you don’t have a wok, use a cast iron skillet as a substitute.
Prepare vegetables. Dice carrots, rough chop on green beans, mince garlic and ginger. Chop green onions, separating the whites from the green tops.
In a bowl, break up day-old rice, so that every grain is separate. Set aside
Heat wok, cast iron or a large deep skillet over medium-high heat.
Add 1 TBSP oil to the wok and add shrimp. Sear each side of the shrimp for 1-2 minutes, remove from heat and set aside.
Add 1 Tbsp of oil to pan. Add carrots and green beans to the pan, stirring often, for 2-3 minutes until veggies are slightly softened. Add ginger and garlic, and mix until fragrant.
Add day-old rice to the pan, and quickly toss in with vegetables. Add another Tbsp of oil if needed. Once the rice has softened slightly and begun to crispy, move the rice to the sides of the pan and make a well in the middle. Add tsp of oil, and pour in scrambled eggs. Gently, scramble the eggs in the middle. Once scrambled, mix eggs throughout the rice.
Add shrimp and green peas. Season with soy sauce, sesame seed oil, white pepper, salt, and a pinch of sugar. Season to your liking.
Turn the heat to high and quickly toss rice through the pan, to make sure all the rice is well seasoned. Drizzle 1 Tbsp of olive around the edges of the pan. Place pan into the oven and broil on high for 4-5 minutes until the top browns.
Remove from heat, and serve crispy fried rice with a garnish of green onions and chili crisp! (click for my favorite)
